A useful addition to any cutlery collection, this hollow-edge 7-inch Santoku knife by Wusthof works well for a variety of food-prep tasks. Use it for anything from chopping carrots and onions to throw into a stew to slicing summer-ripe fruit for a salad or mincing fresh herbs from the garden. For efficient use, the Japanese-style cook's knife features alternating hollows on either side of the blade, which help prevent food from sticking. Overall, the knife measures approximately 11 by 3 by 1 inches.
As part of the Wusthof Ikon collection, the knife comes precision forged from a single piece of high-carbon steel to ensure outstanding strength and balance. Laser tested for accuracy, the unique, compound angle of the blade tapers from the spine of the knife to the edge to create a sturdy, yet extremely sharp cutting surface. It also tapers from the bolster to the tip to give the knife enhanced strength and flexibility. Even more, Wusthof knives offer sharp, precisely tempered blades that allow the knife to hold its edge for an extremely long time (while still being easy to maintain). Another thoughtful detail includes the full-tang handle, which comes riveted for strength; ergonomically designed for a secure, comfortable grip; and handcrafted from African Grenadill wood (African Blackwood)--one of the hardest types of wood, which expands and contracts less than most traditional woods. Ikon knives also feature a rear bolster that acts as a counter balance during use for added control, as well as a forward bolster that makes it possible to sharpen the complete length of the blade. [Wustof Ikon 7" Hollow-edge Blackwood Handle] I am fortunate to own several high quality knives for cooking. I always wondered about Santoku designs and decided to try this one. It's perfect. I find that day in and day out I grab this one first and use it most often. The balance is perfect. The blade permits razor thin cuts of most anything, including garlic. Moreover, the cut is like a surgical incision. Yes, the Blackwood handle adds substantial extra cost but it's truly beautiful. I imagine passing these knifes down a generation or two.
